Chef Ted Assists the Foodbank's Fourth Graduation of
the Culinary Training Kitchen Program
April 11, 2003 - The fourth graduating class
of the culinary Training Kitchen Program of the Foodbank of Monmouth And
Ocean Counties, celebrated with a gourmet luncheon for about 50 guests
today.
Chef Ted assisted Chef Ray Cattley in
preparing the buffet luncheon for the graduates and their guests. As
usual the food was awesome in its quality, variety, and abundance.
This was the best event to date, with the largest (eight graduates) class,
and correspondingly the most guests.
Speakers included Susan Kelly, Executive
Director of the Foodbank, Kevin McHugh, Chairman, Timothy Hamill, VP Jersey
Shore Chefs' Association, Phil Craig, NJ State Representative American
Culinary Federation, Jonathan Henry, Jersey Shore Chefs' Association,
Shannon Lager, Director of Volunteer Services, Boys and Girls Club of Asbury
Park, Ray Cattley, Chef Instructor Culinary Training Kitchen and

goes on to say that 50% of respondents, (heads of household, 18+) agreed
that: "I am so busy and in such a hurry all day that by dinner I'm too worn

Ted Kanterman, an ex-computer engineer,
turned Personal Chef, has the answer to this dilemma. “People ARE busy, and

help my clients get out of the fast food habit, AND I make dinner even more

He does all the grocery shopping, brings his own utensils, prepares all the
meals, packages and labels them in convenient containers, and

Ex-computer salesman from Marlboro cooks up radio career

The name for
Ted Kanterman's new venture didn't take long to cook up.
"Whenever my
wife (Dale) would try and explain my job in computers, she'd always end by
telling people, 'Ted Can Cook, too,' " Kanterman said.
So, when
Kanterman, 55, of Marlboro got tired of trying to make his way in the
topsy-turvy world of computers, he became a personal chef.
Now he finds
himself hosting a new program on WOBM-AM 1160 -- Chef Ted's "Let's Eat Show"
-- during which he offers information on how to cook, what to cook and what
to eat. The program airs from 6 to 7 p.m. Tuesdays.
"I was
sending my resume all over the place, but I wasn't getting any responses in
the computer field," Kanterman said, explaining his career change. Then he
read a newspaper article about a personal chef and "a light went off."
After reading
the article, he talked to the chef, took a class in food business management
and his new career was off and running.
Suzanne
Hilton, a WOBM employee involved in programming, first met Chef Ted on a
business matter.
"I was
looking for a Christmas gift for my parents," she said. "I hired him."
Kanterman
came to Hilton's parents' house with all his cooking tools and prepared 20
meals for two that he stored in their freezer -- with heating instructions
attached.
"My parents
loved it," Hilton said.
"I did
everything she asked, except sit under the Christmas tree," Kanterman said.
So when
Hilton began looking for new show ideas, she remembered him and thought a
radio talk show about cooking might work.
"It's on the
radio," he said. "People can't smell the food or see what it looks like. I
needed a different approach."
So he takes
questions by phone. He offers a recipe of the week, talks about
food-handling and food-storage. On his first show, he gave a quiz about the
food pyramid and how it changes as people age and their nutritional needs
change.
"I don't know
how well it will work out," he said of the radio show. "But I'm trying to
have fun with it."
Meanwhile,
his new life as a personal chef is progressing.
"I do dinner
parties as well as long-term cooking," he said.
If he's hired
for a party, he'll meet with the people, work out a menu, check the kitchen
to see if there are limitations and then go about his business.
"I do all the
grocery buying," he said. "I'll usually spend about five or six hours
preparing the food in the home, and then I'll completely clean the kitchen
and take my pots home."
The show is
one of several new programs on the station that cater to older listeners,
Hilton said.
Ted the Chef
is hoping his laid-back, informative style scores with listeners.
"No matter
what, I'm having a ball cooking," said Kanterman, who is in his second year
as a personal chef. It was a little scary starting out. But it's working
now. It's better than being a computer geek."

The Senior Lifestyle EXPO held today at the Sunrise
Assisted Living facility in Marlboro, N.J. was attended by a variety of
people, young and old alike. there was food and entertainment,
including a female Barbershop Quartet, the Freehold "Fonz", and even a
clown.
Local radio station WPDQ (Freehold, NJ) was present with
DJ Dave The Rave.
About 20 vendors were in attendance, representing a

"Chef Ted Presents To Class At Foodbank"
August
29, 2002 - Chef Ted Kanterman gave a presentation to the current
class of culinary students participating in the Foodbank of Monmouth & Ocean
Counties' "Culinary Training Kitchen".
The goal of the presentation was to
familiarize the students with another, not so well known, career path in the
food industry - the Personal Chef.
The new Foodbank program offers 12 weeks of
hands-on culinary training Monday to Friday 8:30 AM to 2:30 PM, while
preparing nutritious meals for needy children and families served by the
Foodbank. The class is led by Chef Instructor Raymond Cattley and
includes both classroom instruction, and hands on kitchen experience.
Students learn basic cooking and food
handling skills, and prepare all food in the fully equipped onsite
commercial kitchen.
The program also includes Sanitation and Food
Handlers Certifications, job related life skills lessons, job placement
assistance and ongoing support while employed.
Chef Ted felt it was a great venue and
opportunity to offer the students another option in the food industry.
Topics covered included Ted's background in the computer industry; his love
of food and cooking; how he discovered the Personal Chef career path; a day
in the life of a Personal Chef; how the students can become personal chefs
if they so choose; and other related money-making opportunities, including
on-premises catering and dinner party/cooking classes.
The presentation was well-received by
students, and the Chef has been asked to repeat the session for future
classes. Also In the works will be a session in the kitchen preparing
some unique specialty dishes (yet to be determined).
The Foodbank of Monmouth & Ocean Counties is located at
3300 Route 66 in Neptune, New Jersey. It is a non-profit charitable
organization that receives food and grocery products from local and national
sources. These donated, purchased or reclaimed products are then
distributed to local soup kitchens, shelters, pantries, non-profit day-care
centers, and other hunger relief programs serving the needy in Monmouth and
Ocean Counties. Literally millions of pounds of food are distributed
annually!

"Chef Ted Gives Dinner Party For BNI Group"
Having
been a member of BNI (Business Network International), since May of this
year, I felt it was a good idea to invite all the members of my chapter to
my home for a buffet-style dinner party to acquaint them with the
capabilities of a Personal Chef.
Enlisting the help of fellow Chef Stan
Lippman, the menu was developed and prepared to perfection.
About 25 guests arrived for an evening of
food, drink, and lively conversation that, for a change of pace, did not
revolve around business. (Hey sometimes you need a break!)
The menu included a cheese
and fruit display artfully created by Chef Stan, delicious Crispy
Bacon-Wrapped Stuffed Dates, Crudités, Blackened Salmon, Pecan-Crusted
Chicken, Caramelized Fennel and Carrots, Dried Fruit Couscous, Zucchini
Chimichangas, and fresh baked Beer Bread!
Needless to say, the guests were impressed,

"Uncommon
Appetizers" Inspired Chef Class
The students attending the class were hungry
for food and knowledge, and Chef Ted satisfied both!
Wanting to learn more about unusual
appetizers and how they can be the basis for a friendly gathering, seven
attendees received that and more!
The curriculum included demonstrating the
methods to prepare Roasted Citrus Olives,
Caramelized Onion Tart, and
Caribbean Shrimp with Mango Salsa.
Also covered was the techniques involved and preparation of a short pastry
for the tart shell.
The students also learned about the different
types of olive oil, were able to do a taste comparison of four different
oils, and witnessed the use of some unique kitchen tools including a
shrimp cleaner that cleans and peels shrimp
in one quick stroke, and an instant vacuum
marinater that reduces the time needed to marinate foods such as
meat, fish or poultry from hours to minutes.
The students all participated in the various
steps needed to prepare the dishes, and were able to eat their creations!

USPCA Regional Conference in Cherry
Hill New Jersey

The United States Personal Chef Association held their
2002 Regional conference in Cherry Hill New Jersey, the weekend of June 7th,
8th & 9th. This was one of various regional conferences held this year
in the U.S. and Canada.
Held at the Clarion Hotel & Conference Center, the event
was attended by chefs from neighboring states, and even from as far as
Colorado.
The weekend was filled with numerous educational
opportunities to help the chefs hone their professional skills, both through
formal classes and seminars, as well as informal discussions among the
chefs.
ServSafe® certification and Personal Chef certification
exams were held on Friday for chefs that were interested in enhancing their
professionalism.
On Friday
evening their was a soiree hosted by the local South Jersey Chapter of the
USPCA, which included awesome food, drink, and conversation.
Chef Sue Cole, President of the Central Jersey Chapter,
conducted a class on the history and preparation of Pesto which was enjoyed
by all!



On
Saturday evening, a busload of chefs traveled into Philadelphia to sample
the local restaurant fair. I personally experienced some excellent
Caribbean soul food including catfish with a crawfish remoulade
The opportunity to meet and socialize with other Personal
Chefs was an invaluable experience to all those who participated.

GOTCC EXPO - Behold The Power Of Cheese!

SMCC EXPO great success for chefs!
Chef Sue Cole, President of the Central New
Jersey Chapter of the USPCA sets up our table at the Southern Monmouth
Chamber EXPO, held at Doolan's May 22, 2002.
Chef Sue prepared Eggplant Caponata,
and Chef Ted prepared Chicken and Wild Rice Pancakes for the guests
to sample. Needless to say, our table was one of the most popular!
Most of the guests were unfamiliar with the
Personal Chef concept, and Sue and Ted did a great job educating the
attendees on the benefits of the service.
Local radio station WRAT 95.9 was playing
tunes and giving out various prizes donated by the exhibitors. Sue and
Ted were BOTH winners of prizes. Sue won a huge basket of beautiful
flowers, and Ted won a Compaq Internet Appliance!

Ted Can Cook Too! PCS has donated a
full "Standard Service" to the Institute for Children With Cancer and Blood
Disorders, to be auctioned off at their Annual Grand Auction Gala on May
22nd.
All proceeds to benefit the Institute
in support of The Division of Pediatric Hematology-Oncology, the Cancer
Institute of New Jersey, Bristol-Myers Squibb Children's Hospital at RWJUH
(Robert Wood Johnson University Hospital).
The event, will be held at the Grand
Marquis in Old Bridge, New Jersey. Cocktails and browsing 6:30-7:30
PM. Dinner at 8:00 PM.
The lucky winner will receive TCCT's all
inclusive standard service consisting of a custom designed menu with five
different entrees (four servings of each), grocery shopping, meal
preparation in their home, packaging, labeling, and cleanup.

Contest Winners Enjoy Gourmet Meal!

Michelle and Michael Lagana enjoyed their
five-course gourmet meal on the evening of April 2, 2002. They were
the winners of the February Referral Contest at New York Sports Club,
Marlboro, New Jersey.
Ted Can Cook Too! provided the culinary
delights that included bacon-wrapped stuffed dates as the hors d'oeuvres,
smoked turkey linguine as the appetizer, split pea chowder, green salad,
Alaska baked salmon with pecan crunch topping for the entree, and bananas
foster for dessert!
The happy couple thoroughly enjoyed their
evening (the kids were at grandma's) and looked forward to enjoying more
meals prepared by Chef Ted in the future!

for Charity Auction
Ted
Can Cook Too! has donated a complete Standard Service meal package to be
auctioned off in October at Kate's
Foundation's "Round Two for Kate & Kevin" golf outing, cocktail
reception, dinner and auction. The date is October 10, 2002.
The lucky winner will receive TCCT's all
inclusive standard service consisting of a custom designed menu with five
different entrees (four servings of each), grocery shopping, meal
preparation, packaging, labeling, and cleanup.
The Kate Verdon Spisak Foundation for
Melanoma Awareness and Research, Inc. is a not for profit organization
dedicated to informing the public about the dangers of melanoma as well as
providing financial support to the National Institute of Health’s melanoma
research program and the patients and families involved in that research.
The day includes 18 holes of golf, cart
or caddy, free skin cancer screening, lunch, cocktail reception, dinner,
auction, prizes and free information about melanoma.
